Because it’s Fall and for some reason we start CRAVING sweets I wanted to share my little brownie recipe with our favorite readers!
NP Pro is a vegan protein powder that Dr Wiggy and I formulated for Nature’s Pearl a few years ago. It’s the best-tasting vegan protein powder on the market in the opinion of many. We used a pea protein base and then perfected the sweetness, creaminess and fiber over the course of MANY months! One of my favorite things about NP Pro is how easily it bakes. Many protein powders make really dry baked goods or make everything turn out powdery. NOT NP Pro!!
Try this recipe- I promise you won’t be disappointed!
1/4 Cup coconut oil
1/3 cup unsweetened apple sauce
1/2 Cup Swerve or Xylitol
1 Cup Oatbran
2 scoops vanilla NP Pro
1 cup almond milk – unsweetened
2/3 Cup unsweetened cocoa powder
1 tsp baking soda
1 tsp sea salt
1/2 tsp vanilla
1/3 cup dairy-free chocolate chips (optional)
Coconut flakes (optional)
Preheat oven to 350.
Melt Coconut oil. Mix coconut oil, xylitol and applesauce. Add almond milk.
In a separate bowl combine the NP Pro, oats,, baking soda, coco powder, and sea salt.
Add the dry mixture to the wet mixture slowly while mixing with a hand mixer
(I actually just throw everything into my Vitamix and skip the mixer all together)
Spread coconut oil on baking pan. Add batter. Sprinkle on chocolate chips/coconut flakes.
Bake about 20 minutes or until a toothpick inserted in the center comes out almost clean.
Let cool. Makes about 16 servings.
